Piquin, or pequin, chillies are tiny, red, Mexican chillies which bring a fiery heat to dishes. One of the smallest chillies, piquin chillies are less than one inch long - but are around twenty times hotter than jalapeños, measuring 100,000 to 140,000 on the Scoville Scale of chilli heat.
Piquin chillies have a citrus spiciness, and bitter chocolate notes. They add heat and depth to tomato sauces and red meat marinades – their size and strength also make them a good ingredient for infusing oils and vinegars.
The name piquin is thought to be from the Spanish word pequeño, which means 'small'. They're also known as bird peppers, chiltepin, pinhead peppers and chile del monte.
