P & T pu er, or pu-erh, bai ya white tea is hand-harvested from wild tea trees in China’s Yunnan province. The pale green tea buds have a sweetly floral character, with notes of hay and cedar.
If you’re already familiar with Chinese tea, a white pu er may seem like a contradiction in terms. Pu er teas are normally black teas that are aged and fermented to give their unique character. This tea is picked from the same tea trees that produce black pu er tea, but the tea is harvested when the leaves are little more than buds. They are then sun-dried and lightly heat treated to prevent oxidation – the process that turns tea leaves brown and changes their flavour.
For the best pu er bai ya experience, infuse two teaspoons of tea in 250ml of water at 80°C. Steep in a small teapot for 2-3 minutes. Each serving of pu er bai ya tea can be infused up to four times, with each infusion revealing new layers of aroma.
