Organic barberries are an essential ingredient in Middle Eastern dishes such as Persian jewelled rice, or zereshk polow. The berries have a tart, citrussy flavour that brightens up vegetable dishes and cuts through rich meat.
To use the barberries in cooking, first soak in cold water for around 10 minutes. Then drain and sauté in a little oil until they plump up. Add them whole into rice or couscous dishes. Or roughly chop and mix with diced onion, cooked rice, slivered almonds and your choice of spices to make a stuffing for lamb or chicken.
Organic barberries are also great in muffins, cookies and even breakfast cereals. Use them like cranberries and pair with flavours like orange, cinnamon and white chocolate.
