Mild soy sauce ‘heisei’ is a sweeter soy sauce than others you might have tried, with a long umami flavour and finish. This soy sauce is made from whole soybeans which have been cultivated in Kyushu (the most southern Japanese island), and akazake, a traditional sake from Kumamoto.
The sweet flavours of the mild soy sauce lend itself well to steak, roasted scallops and sashimi.
