The oyster knife itself, or ‘La Lancette’, is a professional knife with a very strong steel blade and stunning rosewood handle.
To open an oyster, hold the leather glove in your hand so that you can put your thumb through the loop on the back and keep it in place. Place an oyster in the glove with the tip facing towards you. Turn the blunt edge of the knife towards you and grip it by the base of the blade. Then insert the tip of the knife into the gap between the shells, and twist to open. Use the knife to slice through the valves that attach the oyster to the shell, and enjoy!
