Lalani Kangaita volcanic buds tea is a white tea that opens with soft peach flavours and floral notes. This gives way to hints of spice and a long, mineral finish. It’s a special collaboration between Lalani & Co and the Kangaita Estate in central Kenya.
To meet the demands of the market, the Kangaita Estate has long produced regular black teas. However, Jameel Lalani of Lalani & Co recognised that its volcanic soil and high-altitude location was the ideal environment for more exclusive, higher quality teas. At higher altitudes where the temperature is cooler there are far fewer pests. This means the tea plants produce less polyphenol compounds – a natural pest deterrent with a bitter flavour – so teas grown at higher altitudes are smoother. With a desire to show the world how much potential Kangaita Estate has, Jameel collaborated with them to produce some very special white teas.
White teas are made from tea leaf buds rather than fully formed leaves. They are also characterised by the drying process. Unlike green and black teas that are quickly dried at high temperatures, white teas are very slowly dried at cool temperatures. This gives the buds a very pale silvery colour and delicate flavour.
You can infuse this white tea multiple times in one sitting – though the flavour will grow more delicate with each infusion, it is surprisingly long lasting. The volcanic buds white tea also develops more flavour with time. Keep some aside in an air-tight container to age and see how it improves in a year or two.
Add 150ml of water at 60°C to 6g (2 tbsp) of Kangaita volcanic buds tea. Infuse for 5 minutes.
