Kuzu – also known as wild or Japanese Arrowroot – is a gluten free starch thickening agent. Kuzu has a neutral flavour and a smooth texture, so it is perfect for thickening everything from soups to glazes, gravy to pie fillings. Also try dusting vegetables, fish or meat before frying for a light and crispy coating.

The kuzu powder tends to form clumps, so break up any lumps before measuring it out. Dissolve the kuzu in a little cold water before adding to the liquid you wish to thicken. One tablespoon of kuzu will thicken approximately 240ml of liquid.

Reseal after opening and store in a cool, dry place. Ingredients: wild harvested kuzu* (Puerari lobata), water. *organically grown.
