Urfa chilli flakes, or isot biber in Turkish, are unique roasted paprika flakes with an intense purple colour. The peppers are sun-dried during the day, then tightly wrapped at night in a process called ‘sweating’. The urfa peppers never completely dry out, so the flakes are slightly moist. As well as the intense colour, this process gives the urfa flakes a complex flavour. Notes of coffee, smoke, citrus and even chocolate make this a chilli to remember.
Sprinkle urfa chilli flakes over Turkish-style breakfast eggs or homemade hummus. They’re also fantastic in spiced lamb koftas or burgers.
