Louis Francois glucose powder is a simple sugar used as a sweetener, and in molecular cooking. It can easily be diluted by mixing in water.
Use it in ice cream making to prevent the formation of crystals, as it has a lower freezing point than granulated sugar. Recommended usage is 4% of the total weight of the ice cream mixture. Also try adding the glucose powder to icing to ensure a glossy, smooth consistency.
