This 'gold' 200° bloom gelatin powder can be used interchangeably with sheet gelatin. One 2g leaf of gold gelatin is equivalent to 2g of 200° bloom gelatin powder.
For a tender set, use 0.7% to 0.75% by weight, i.e. use 7-7.5g to set 1l of liquid. For a firm set, use 1% by weight , i.e. 10g to set 1l liquid.
There are two ways to use the gelatin:
Dissolving directly in boiling water: Add to hot water 80°-90°C. Use roughly 50g water for 10g gelatin, and stir rapidly. Leave to cool whilst stirring gently. The gelatin will fully dissolve after around 15 minutes and when the temperature is 50°-70°C. If any bubbles form during the mixing process, before use, wait a little until the bubbles dissipate.
Traditional method: Sprinkle gelatin over the surface of cold water, and mix gently. Leave to swell for 1-2 hours. Then heat to around 65° to 70°C (but not more than this). Keep at this temperature for 15 to 20 minutes until all the gelatin dissolves.
