Gardenia zaatar, or za'atar, is a highly aromatic herb and spice blend from Lebanon. The combination of wild thyme, sumac, sesame and salt transforms meat rubs, roast vegetables and feta salads.
For a traditional Lebanese breakfast, mix a generous amount of the Gardenia zaatar with olive oil to make a thick paste. Spread on top of flat bread dough just before baking and devour while warm from the oven. These zaatar-topped flatbreads are known as manoushi, and are also a popular street food.
