Fiasconaro Leonforte peach IGP jam is a luxurious accompaniment to croissants and lightly toasted brioche. The amber-coloured jam is made with Sicilian Leonforte peaches IGP.
Leonforte peaches are also known as La Pesca nel Sachetto, or ‘the peach in a bag’. This is because of the unique process where famers of the peaches wrap each one in an individual parchment paper bag. They do this while the peaches are still on the tree, to protect the ripening fruit from the elements. The bags also protect the fruits from fruit flies, so the farmers don’t need to use pesticides.
Leonforte peaches ripen from August to October – very late compared with most other peach varieties. They are sweet and aromatic, and highly sought after in the autumn months. Leonforte peaches not only have IGP status – meaning true Leonforte peaches are only grown in certain areas of Sicily – but they are also protected by the Italian Slow Food Presidium.
Fiasconaro was founded in Castelbuono, Sicily in 1953 by Mario Fiasconaro. Mario started out as an ice-cream maker and pastry chef, and his first great masterpieces were mountains of profiteroles. His three sons, Fausto, Nicola and Martino, began learning the art of pastry when they were children. Today, the three brothers still lead the company.
