Dried pinto beans literally translate as 'painted', which is apt for Spain's most beautifully-coloured bean. During cooking, the pink streaks turn to a flush, pink colour which covers the entire pinto bean.
Cooked ‘cowboy style’, pinto beans make a warming and fiery side dish, served across Northern Mexico. Fry a little bacon, add a can of tomatoes, some garlic, coriander, canned jalapeños, a little chilli, and pre-cooked pinto beans. Simmer for 15 minutes, ladle the pinto beans into bowls, and relish the heat of nomadic frontier cuisine.
Pick over beans for stones and rinse in cold water before boiling the beans for ten minutes, and then reduce to a simmer until the pinto beans are soft.
