What is a perforated baking tray? 

Perforated baking trays have small peforamted holes in the base. This allows heat to seeps through for a more even heat distribution, and an even bake. This allows more moisture in your food to escape, which makes for crispier, crunchier, crumblier textures. Perfect for chips, biscuits, cookies and pastry.
