The umami paste is made from koji – white rice that’s inoculated with a naturally occurring fermentation culture. It breaks down the rice into a paste that has an intensely umami flavour. The koji then helps to intensify the umami of anything you add it to! Here it’s mixed with soy sauce, giving it a touch of extra saltiness and sweetness. The chilli gives a hint of red pepper flavour as well as heat.
