Citric acid is a natural preservative found in lemons, limes and oranges. The white powder has the familiarly tart flavour of citrus fruits, making it a useful dry flavouring. It is also used in modernist cuisine to adjust the pH balance, or as an emulsifier to stop fats from separating.
The most common use for citric acid though is a preservative. Use in homemade lemonade, elderflower cordials and jams, or even add a pinch to fruit salads or avocado purees to prevent discolouration.
