Chocolate plastique is used for moulding small decorations, or chocolate roses, to decorate cakes and patisserie. It can also be rolled out into a thin sheet to cover a cake or cupcakes. The chocolate flavour means the chocolate plastique is often used instead of sugar paste, with chocolate cakes or desserts.
To use, knead the dough so it becomes flexible and shape immediately. Close tightly after use. White chocolate plastique is also available.
