Chilli Jam Man Louisiana wing sauce gives a hot chilli-citrus kick to roasted or barbecued chicken wings. Fresh lime and lemon juice give the sauce a zesty lift, while plenty of garlic adds pungency and Scotch Bonnet chillies bring the fire.

Use the Louisiana wing sauce to marinade chicken wings before cooking for a mellower, deeper flavour. Or use to dress the wings right towards the end of cooking for a fresher, more powerful flavour. Serve with a red and white cabbage ‘slaw and some sour cream to cool off!

The Chilli Jam Man, aka Simon from North Yorkshire, got a taste for fiery Southeast Asian condiments after spending a few years in Australia. When he got back to the UK, none of the chilli sauces or jams in the shops lived up to his memory of those hot, sweet and sour flavours. So, Simon decided to make his own. They were a big hit with friends, family and local markets, and it soon turned into a flourishing business.

The Chilli Jam Man has won 10 Great Taste Awards so far, and his Rib Tickler BBQ sauces can be found in pubs and restaurants across the country. Most of his sauces and jams are vegan and gluten free.

Ingredients: water, red pepper, chilli (Scotch Bonnet), garlic, tomato puree, lime juice, ginger, lemon juice, onion, sugar, salt, tapioca starch, rapeseed oil, turmeric, pepper, preservative: potassium sorbate, coriander, cumin.
