Canarian palm syrup is unlike any syrup you’ve had before. With complex notes of coffee and more savoury notes similar to soy sauce, it’s just as good with waffles and ice cream as it is in savoury Asian dishes.
The palm syrup comes from only one of the Canary Islands – La Gomera. It’s made by extracting the sap of Canarian palm trees called guarapo, and slowly boiling it until thick and sweet. Each palm tree can only be harvested every 3-4 years, so Canarian palm syrup is a highly seasonal and sought-after ingredient.
