Budo sansho, also known as sansho berries are the cousin of the Sichuan pepper. Fresh sansho berries have bumpy skin, and are vibrant green in color. Once dried, the berries have a darker green hue.
With a citrus aroma and peppery flavour, these whole Japanese berries can be used as they are to infuse flavour into soups, stocks and sauces, or milled and sprinkled over sushi and fresh fruit.
Sansho is one of the key ingredients used in shichimi togarashi dried spice blend.
