When garlic is cooked using the confit method, it’s cooked in lots of olive oil over a very low heat. The garlic becomes soft and fragrant rather than pungent, and gives the mayonnaise a milder, sweeter garlic flavour.
Brindisa confit garlic mayonnaise is fabulous with nearly all green vegetables, particularly asparagus. Serve as an aioli-alternative with prawns and fried squid, or mix through boiled new potatoes to add a subtle garlic twist to a potato salad.
