Borlotti beans are a variety of kidney beans which have a nutty, creamy texture, and hold their shape well during cooking. Their nickname ‘cranberry beans’ come from their distinctive red markings – though this fades during cooking as they become a more uniform, pale colour.
Borlotti beans are delicious in soups and stews. Try serving meat dishes on a bed of borlotti beans, or let them cool, and mix with a dash of vinegar and chopped herbs for a beautiful, summer salad.
