Amato venere rice, also known as black venus rice or purple rice, is an aromatic wholegrain black rice from Naples in Italy. It has a stunning black-purple hue and a unique fragrance that’s reminiscent of sandalwood.
Amato venere black rice goes well with white fish, seafood and chicken. The rice is also highly nutritious and is packed with minerals such as magnesium and selenium.
Riso venere is a cross between the Chinese black ‘forbidden’ rice and a strain of Italian rice. It turns a deep purple colour when cooked and has an almost creamy texture. This makes it fabulous for risottos, especially with subtle flavours like spring vegetables or chicken broth with a spare dusting of parmesan so that the unique flavour of the black rice shines through.
Black venus rice does take quite a long time to cook – between 45 and 50 minutes – but the results are worth it! For best results, do not wash the rice before cooking. Washing strips the nutrients from the black hull and may even dilute the flavour.
