Allspice is a warming spice reminiscent of cloves, cinnamon and nutmeg. Cultivated in southern Mexico, allspice is the dried, unripe fruit of the pimenta dioica tree. Allspice also goes by the name pimento and is popular in Caribbean cuisine as well as English baking.
Allspice is used to add warmth to poached fish stock, fruit and vegetable pickes and wild game. It's also a central ingredient in Caribbean jerk cuisine. In English baking allspice can be used in baked apples, sticky toffee pudding and spiced traybakes. It has a strong association with Christmas flavours and works well with ginger and orange.
Allspice's warm, spiced flavour comes from its high eugenol content - a natural compound with anti-microbial qualities. Indeed, Russian soldiers in the Napoleonic Wars would even put ground allspice in their boots to keep their feet warm and disguise the odour!
