Maseca blue masa harina flour makes intensely corn-flavoured tortillas and tamales, with a stunning blue hue. This authentic Mexican blue maseca has a sweeter, nuttier flavour than white or yellow varieties.

The corn flour is made from an ancient variety of blue corn. The kernels are dried, cooked and then soaked in mineral-rich lime water, before being ground into a fine flour. The flour is a pale blue-grey in the packet, but becomes vibrant when added to water and darkens during cooking to a deep indigo colour.

Use maseca blue masa harina in a wide variety of Mexican dishes – such as tortillas, tacos, gorditas and tamales. The corn flour also makes a great ingredient in gluten free cooking. Combine with xanthan gum or guar gum to make gluten free bread, pie crusts and sponge cakes.

Please note that blue maseca has a very short shelf life. It is produced in Mexico with just 3-4 months, and then has to travel to the UK when it will have around a month. Current best before date 15 Sep 2018.
