Description

Lime powder, also known as lumi or loomi powder, is a seasoning with citric-sour flavours. The lime powder is made out of ground black limes which have been dried in the sun to accentuate their rich, fermented, musky flavours. The colour of the lime powder changes throughout the year. It can appear golden yellow, or earthy green/brown.

Lime powder is most often used in traditional Middle Eastern recipes, like Persian stews, spiced meatballs and pilaf rice. The lime powder  - also known as lumi or loomi powder – is a versatile ingredient that is also delicious sprinkled on seafood, used to season light, South East Asian salads or rubbed into chilli chicken.
