The dry bristles also mean that a patisserie brush is great for applying edible gold or edible silver to chocolates and patisserie. This large patisserie brush is particularly useful for brushing egg over a large surface of pastry, for a lightly brown, golden finish.

This 35cm, beech-handled patisserie brush is a hardwearing and elegant kitchen staple. A small patisserie brush and medium patisserie brush are also available.
