Gilchesters organic semolina fine wheat flour is not only great for making Italian breads, but also for homemade pasta. The semolina is double-milled for a fine texture. Organic semolina fine wheat flour is also ideal for dusting pizza bases, bannetons and baking cloches to add texture to the crust.

Gilchesters Organics is a family business run by husband and wife team, Andrew and Sybille Wilkinson. Their farm and mill are based just north of Hadrian’s Wall in Scotland. Gilchesters grow organic heritage grains and use a strict crop and cattle rotation system, to ensure their soil is never depleted of essential nutrients and minerals.

After harvesting, Gilchesters use a traditional stone mill to grind the grains into flour. Stone milling preserves the high concentrations of vitamins and minerals within the grains. All of Gilchesters Organics’ flours still contain the precious wheat germ, so they’re higher in fibre than most supermarket flours. The wheat germ is also a great source of vitamin E and essential fatty acids.
