Force de l’Ocean: salt & spices will have you craving fish every night of the week after just one taste! The blend of Basque fleur de sel, Japanese sansho pepper and Iranian saffron is the original creation of Pierre Arostéguy.

Sprinkle the finishing salt over sashimi or fish carpaccio to add big mineral notes, hints of citrussy heat and the subtle hay-like fragrance of saffron.

The fleur de sel is from Salies-de-Béarn, a small town in the Basque region, where people have harvested salt from the local springs since the Bronze Age. It is obtained purely through natural evaporation, and is the favourite curing salt of makers of Bayonne hams.

Sansho is a fiery Japanese ‘pepper’ from the same family as Sichuan pepper. It’s bursting with citrussy, lemongrass flavours and has a cold heat that makes your tongue tingle.

Force de l’Ocean was developed with fish and seafood in mind, but try it with fresh green vegetables and a glug of olive oil for a mouth-watering side dish.

Maison Arostéguy is a Basque institution. The Arostéguy family opened a unique grocery store in Biarritz in 1875, importing goods from all over the world. In the 1930s, their reputation for high-quality products even attracted famous musicians and actors. Photographs and keepsakes are still on display in the store today.

As a family of spice grinders, they also created their own spice blends. Current owner, Pierre Arostéguy, travels the globe looking for inspiration and rare ingredients. He is also passionate about promoting his native Basque food culture. Pierre sums up Maison Arostéguy’s philosophy with the following phrase: ‘For us, no table is good without generosity, creativity & conviviality’.
