Edible gold leaves are perfect for making 23-carat dishes which bring a little extra glamour to confectionery and patisserie. Or perhaps take inspiration from Heston and use the edible gold sheets in a savoury dish – like his “mock turtle” soup, which involves wrapping a watch-shaped home-made stock cube in gold leaf for a glittering consommé starter.
The shimmering gold leaf sheets create a beautiful contrast against dark chocolate – perfect for truffles or tortes. The gold leaves should be handled carefully, in a way that avoids contact with water – ideally using a small patisserie brush.
