Use the 36cm copper band hangiri, or sushi barrel, to mix and cool sushi rice to the perfect temperature and humidity for rolling into sushi. This large Japanese hangiri sushi barrel is made out of cypress wood, which soaks up residual moisture to give the signature sticky texture. Cypress wood is always the wood of choice for Japanese chefs for its beautiful, but neutral scent, and antibacterial properties.
Hangiri are used in Japanese homes and professional kitchens alike. Hangiris have large, flat bases allowing the cooked rice to be spread out evenly in order to release steam and cool it down.
Use a paddle to stir and fold sushi vinegar through the sushi rice, and cover with a cloth until you are ready to use the hangiri. This sushi barrel is bound by two copper bands in the traditional style.
This 36cm hangiri is ideal for cooling rice for 6-8 people (approximately 5-6 cups of rice before cooking). A smaller 30cm copper band hangiri is also available.
