Use the 30cm copper band hangiri, or sushi barrel, to cool sushi rice to the right temperature for rolling into sushi. This authentic hangiri sushi barrel is made out of cypress wood, which soaks up residual moisture to give the signature sticky texture. Cypress is the wood of choice for sushi chefs: both for its delicate and neutral aroma, and also for its absorbency and antibacterial properties.

Hangiri are used in Japanese homes and professional kitchens alike. Hangiris have large, flat bases allowing the cooked rice to be spread out evenly in order to release steam and cool it down.

Use a paddle to stir and fold sushi vinegar through the sushi rice, and cover with a cloth until you are ready to use the hangiri. This sushi barrel is bound by two copper bands in the traditional style.

This 30cm hangiri is ideal for cooling rice for 3-4 people (approximately 2-3 cups of rice before cooking).
