A key ingredient in Japanese cooking, mirin is a sweet rice wine used in soups, dips and dressings. A versatile ingredient, mirin rice vinegar provides a unique balance of sweetness and umami to dishes. 

How to use mirin?

Produced by fermenting glutinous rice, koji mold, and shochu (a distilled spirit), Mirin is commonly used in marinades, sauces, and glazes, imparting a glossy finish to dishes like teriyaki chicken or salmon, sukiyaki and tamago (Japanese omelette). 

What does mirin taste like?

Its subtle sweetness also balances the salty elements in soy-based sauces. Tentsuyu, a mirin sauce made with soy and dashi is the classic accompaniment to dip tempura in. Our range also includes premium roasted mirin and aged black mirin, prized for its complex treacle notes.
