Blueberry Caves Recipe

These are Swedish blabarsgrottor – blueberry ‘grottos’ or caves. Don’t be fooled, they look like cupcakes - but they’re more similar to a shortbread, while a little softer. You don’t get a ‘snap’ but more of a soft crumble. My mum loves to grate white chocolate over them when they’re fresh from the oven. Or serve them ‘grandma style’ and put a little icing sugar and water in the natural jam dip after they’ve cooled, which hardens and makes a crisp coating.
Ingredients Serves: 22
- 270g plain flour
- 90g caster sugar
- 1tsp baking powder
- 2tsp vanilla extract
- 200g salted butter
- 100g blueberry jam
- white chocolate (optional)
Equipment
- mixing bowl
- mini cupcake cases
- baking tray
- cooling rack
Method
- Preheat the oven to 200°C.
- Mix the flour, sugar and baking powder in a bowl.
- Cut the butter into cubes and quickly mix it into the dry ingredients, along with the vanilla extract. Leave to rest in the fridge for 15-30 minutes so the dough is easier to handle.
- Roll the dough out into walnut sized balls, and place them in mini cupcake cases on a baking tray.
- Make a little dimple with your thumb and fill with jam.
- Bake in the oven for 10-13 minutes and leave to cool on a rack.
- If you want, you can grate over some white chocolate when they come out of the oven.
