November: What's Cooking?

We love to hear what you’re cooking with Sous Chef ingredients, so we’ve asked you to get in touch! Each month we're choosing someone at random to receive a £50 Sous Chef Gift Voucher until the end of February 2014. 

November’s winner is Stan B, whose stunning 7 course menu is detailed below. There was a diverse range of cooking with dishes from Mexico, the Basque Country and Italy as well as baking to celebrate Halloween and Thanksgiving.

November’s entries:


Carnitas tacos and green pork and cheese enchiladas from Lina G., who used masa harina and a tortilla press to impress Glaswegians with a Mexican dinner party to remember.

Basque chicken with chickpeas and espelette pepper from Nicola F, using the spicy red pepper flavours of piment d'Espelette.

Thanksgiving/Halloween inspired pumpkin cheesecake from Melanie S with pumpkin pureé, rum and a light orange glaze. It went down so well she's now contemplating opening a cheesecake shop!

Pappardelle and English winter truffle from Stan B as part of a 7 course birthday bash for his daughter. He made his own tagliatelle using a tagliatelle rolling pin.

Other courses included:

  • Onion squash soup, balsamic glaze, chives and 64.5 yolk.
  • Cod on Puy lentil and parsley oil, with crispy ham on chilli chutney.
  • 72 Hour brisket, cavolo nero, sous vide carrot , crispy gnocchi, horseradish cram and red wine/mushroom jus cooked in a sous vide machine.
  • Bergamot sorbet with limoncello - Muscat poached kaiser pear, frangipane crisp, marscapone.
  • Clacbitou with beets
