Yoki fubá mimoso, finely ground corn flour, is used to make the popular Brazilian corn cake Bolo de Fubá - made even more delicious with the addition of coconut milk. After manioc or cassava flour, corn flour is the second choice of flour in Brazil. The Brazilian corn flour is generally used instead of wheat flour in both sweet and savoury baking.
