The venison in this chorizo comes from the Spanish mountains of Picos de Europa. Made with venison loin, pork loin, Iberico pork belly, paprika, garlic and spices, the chorizo is then lightly smoked to cure it. The venison has a gamey, earthy flavour that’s brought to life by the smokiness from the curing process and heat of the paprika. Add slices of venison chorizo to a paella for smoky depth, or fry chunks with onions and garlic and serve with pasta – be sure to keep a hunk of fresh, crusty bread on standby to mop up the flavourful, bright orange oil that oozes from the cooked sausage!

A lightly smoked Venison Salami is also available.

Ingredients: venison loin, pork loin, Iberico pork belly, paprika, salt, garlic, parsley, spices. Store in a cool, dry place.
