Sorbitol is a sugar free sweetener with significant moisture and texture stabilizing qualities, preventing baked products becoming dry or hard. Sorbitol also does not brown in the cooking process making it an excellent ingredient for cooking preparations where a paler colour is desirable, such as cookies - and we haven't tested this - but it might also prevent the oven browning on French macarons!
