Shaoxing wine is Chinese cooking wine made from fermented, glutinous rice. It is a core Chinese cooking ingredient which has no western substitute. Sometimes known as Shao Hsing wine or simply Chinese Rice Wine, the amber liquid has rich, sherry notes and a dry, sharp taste which enhances flavours without being overpowering.
It takes its name from the Shaoxing region of Zhejiang, an eastern Chinese province, where the wine has been produced since the fifth century. Shaoxing wine as a distinctive, dry fruity flavour which works well in many Chinese dishes including soups, marinades and potsticker dumplings.
