The salchichon Riera coated in black pepper is a stunning, rustic-style cured sausage from the Catalonia region in northeast Spain.

Specially selected cuts of pork are minced and seasoned simply with sea salt and black pepper. The seasoned pork mixture is hung in natural casings for up to two months to cure. This slow drying and aging process matures and develops the flavour. The crushed black peppercorn coating gives an extra savoury spiciness to the sausage.

Slice the salchichon thinly and enjoy with a glass of red wine or a cold beer and some Spanish olives. Salchichon also makes a great addition to Spanish charcuterie boards.

Casa Riera Ordeix are a family-run business in Vic, a city in the Bages region of Catalonia. They have been producing cured sausages since 1852, and their headquarters still occupy the building where it all began. They are now a Vic institution, and their expertise and passion for quality has enabled their sausages to achieve worldwide fame.
