Try Renata cassava cake, bolo de macaxeira in Portuguese, for an authentic taste of Brazil. Other countries use cassava in baking but this cake recipe is unique to Brazil, where cassava is one of the staple foods. The cassava cake mix cake mix saves a lot of time preparing the root vegetable - there is no need to boil and pound the cassava root first.

To make the casava cake:

  1. Mix together cake mix with 300ml milk, 3 eggs, 2 tbsp margarine, and 50g grated coconut. Beat in a mixer on high speed for four minutes or by hand
  2. Pour into a greased and floured cake pan and bake at 180 C for 35 to 45 minutes. When the cake is ready leave to cool for 15 minutes and serve.

Ingredients: Sugar, enriched wheat flour with iron and folic acid, starch, vegetable fat, modified starch, dried cassava, salt, leavenings (sodium bicarbonate, sodium aluminium phosphate, monocalcium phosphate) and flavours. Contains gluten.
