Popping candy - or 'sparkling sugar' - is just that! It makes a fizz, crackle, pop sound and sensation in your mouth. The sugar crystals are carbonated, which fizz when they come in contact with moisture. Place a couple of a few pieces on your tongue to feel the popping sensation and hear the distinctive crackle - though make sure you don't try to secretly snack on pack whilst talking on the phone - the fizz is very loud!

Popping candy was once a playground sweet ('space dust') and is now frequently used in Michelin-starred kitchens. Try Heston Blumenthal’s exploding chocolate gateau, or use them to dust meringues, chocolate truffles and cover cake pops. Or drop into some still wine just before serving for instant 'champers'.

If you want to use the popping candy in a recipe that already contains moisture, for example a set strawberry flan, it is best to use chocolate coated popping candy or cocoa butter coated popping candy. The coating helps to keep moisture from getting into the popping candy, so it pops in the mouth rather than in the cake.
