Pane carasau is a traditional Sardinian flatbread, and very similar to 'carta di musica' or music paper which describes how delicate it is. Pane carasau is very wide and thin, and breaks into crisp shards that are ideal for dipping. pane carasau can be eaten dry or moistened with water, wine or sauces.

One traditional way to enjoy pane carasau is to make pane guttiau, which is a sort of Sardinian bruschetta. Season large pieces of the bread with extra virgin olive oil, salt and garlic and place in a hot oven for a few minutes.

Another traditional dish that uses pane carasau is pane frattau. Bring a pan of salted water to the boil and immerse pieces of the pane carasau for a few seconds. Set aside the moistened bread, then blend together fresh tomatoes with grated parmesan to make a simple salsa. Line a deep dish with the moistened bread and spread a layer of salsa on top. Build up the layers in the dish and finish with a layer of bread. To serve, top with a poached egg.

Please note: the pane carasau are extremely thin and brittle, so the delicate sheets are likely to arrive ready broken, in the perfect sizes for serving with a cheeseboard or as bruschetta
