Dried mung beans are a small, green pulse with a lentil-like texture. Mung beans are often added to curries and stews for extra nutritional value and creamy, nutty flavours. Mung beans don’t take as long to cook as other pulses – ideally, they should be soaked, and then simmered for 20 minutes.

Once cooked, mung beans are delicious when simply tossed in a little olive oil, lemon juice and garlic, and served as a side dish. In the Vietnamese cookbook, Secrets of the Red Lantern, they’re used for making sweet mung bean dumplings in ginger sauce, and other South East Asian recipes. Sweeten and mash the mung beans, then use them to fill sweets.
