What is in jerk seasoning?

The primary ingredients in jerk seasoning typically include:

  • allspice berries (also known as pimento), 
  • scotch bonnet peppers, 
  • thyme, 
  • garlic, 
  • ginger, 
  • and various aromatics like cinnamon, 
  • nutmeg, 
  • and cloves. 

These ingredients are blended to create a complex and well-balanced flavour profile that combines heat, sweetness, and earthiness. The term "jerk" probably derives from the Spanish word "charqui," meaning dried meat, as jerk seasoning was traditionally used to preserve and flavour meat. It refers to the dry rub, wet marinade, as well as the style of cooking.

Jamaican jerk seasoning is commonly used as a dry rub or wet marinade for a variety of meats, most notably chicken and pork, but it can also be applied to fish, tofu, or vegetables. 

To achieve its full potential, the marinated food is typically grilled or smoked over pimento wood or charcoal, imparting a smoky, spicy, and aromatic essence.
