Essential Cuisine game glace adds fabulous depth of flavour to your dishes in seconds. The heavily reduced richly flavoured venison and beef stock is a magical storecupboard ingredient. Give your sauces and marinades tremendous richness and a great hit of flavour. The venison glace has been developed by chefs for chefs. 

You'll find many uses for the Essential Cuisine venison glace:

  • Dilute with water - 25g per litre - to make up a venison stock for a richer tasting broth
  • Intensify flavours in braises and stews: stir a teaspoon into the sauce for a rich venison casserole or jugged hare
  • Intensify flavours in sauces & salads: whisk a little with balsamic vinegar and hazelnut oil as a dressing for a warm pigeon salad, or warm with a fruit jelly for a sweet-savoury glaze
  • Brush the game glace onto venison steaks or pigeon breasts before grilling for a richly flavoured and deeply coloured glaze
  • Enrich terrines and game pies: stir a teaspoon through the mix for a game pie or terrine before leaving to set in the fridge
