These dried chipotle chillies are made from smoked jalapeño peppers, which bring gentle heat and an intense smokiness to meat marinades and stews. The meco chipotle chillies are not as hot as the mora chillies (which are smoked serrano chillies instead of jalapeño), but they are smokier, making them perfect for slow-braised dishes.
The jalapeños set aside for chipotle mora are left to ripen on the bush until they’re deep red, sun-dried and shrivelled. They are then smoked for several days to infuse them with strong wood-fire, tobacco notes, and to remove any remaining moisture. Try rehydrating a whole chipotle in warm water for twenty minutes and blend into a paste for meat marinades. Slice very finely and fry with onions at the start of recipes – or for more subtle, smoky flavours add a whole chipotle to a slow-cooked stew.
