Chervil seeds grow into an upright annual herb with aniseed-flavoured leaves and umbels of small white flowers in summer. The chervil leaves look like a small, delicate version of parsley.

Sow these chervil seeds outdoors between March and September and harvest them between April and November. Plant the seeds to a depth of 1cm. The chervil plant likes well-drained soils and partial shade.

Chervil’s mild, sweet aniseed flavour works well with fish, soups and sauces and adds a flourish to more elaborate dishes. Chervil and borage make a fragrant butter for cooking mussels and razorclams. Chervil also works beautifully chopped and added to homemade mayonnaise or stirred through kedgeree.
