Borage seeds grow into an annual plant with fast-growing leaves, coarse hairy stems and branched cymes of blue flowers. The plant grow to 0.5-1m tall.

Sow these borage seeds outdoors between March and July and harvest them between June and October. Plant the seeds 20cm apart and 1cm deep. Borage is best suited to well-drained soils and likes partial shade.

Borage leaves are great in salads and taste a little like cucumber. They also work well churned into butter or yogurt, and served with fish and shellfish. The edible blue flowers can be used frozen in ice cubes and for adding an edible splash of colour to dishes.
