Malabar black pepper has light and zesty aromas, with a cold heat that can be felt on the lips. It’s one of the oldest varieties in the world, known for its woody notes and fruity flavours. It is grown on India’s South West coast, where it is picked before fully ripe and dried in the sun, turning it a brown-black colour. Malabar pepper was first imported to Europe in 1498 when Portugese explorer Vasco de Gama landed on the Indian coast – but its popularity means it’s been imported ever since.

Malabar pepper works well with all red meat and fish dishes, and brings an exotic twist to fruit desserts. Much like wine and oil, pepper flavours are affected by ‘terroir’. They are best when paired with other regional dishes, meaning that Malabar pepper’s natural partners are light, Southern Indian curries and Neychoru rice.
